Easy Instant Pot Posole (hominy) with Green Chiles

1cupRancho Gordo hominy, rinsed
24ozfrozen green chiles (already chopped and peeled)
12frozen pearl onions
Place dried hominy, water, and 1 teaspoon of salt into Instant Pot. Pressure cook on high for 1 hour and 20 minutes. After releasing the pressure, drain the hominy then return to Instant Pot.
Add remaining ingredients. Leave the Instant Pot uncovered, and set to "saute low" and simmer for 20 - 30 minutes, stirring often. Discard bay leaf. Add salt and pepper to taste. Serve, garnished with avocado, runny egg, and/or sour cream.
