Easy Instant Pot Posole (hominy) with Green Chiles

  • Instant Pot


  • 1 cup Rancho Gordo hominy, rinsed
  • 5 cups water
  • 1 tsp salt
  • 24 oz frozen green chiles (already chopped and peeled)
  • 12 frozen pearl onions
  • 1 bay leaf
  • 1 T oil
  • 1 tsp salt


  • Place dried hominy, water, and 1 teaspoon of salt into Instant Pot. Pressure cook on high for 1 hour and 20 minutes. After releasing the pressure, drain the hominy then return to Instant Pot. 
  • Add remaining ingredients. Leave the Instant Pot uncovered, and set to "saute low" and simmer for 20 - 30 minutes, stirring often. Discard bay leaf. Add salt and pepper to taste. Serve, garnished with avocado, runny egg, and/or sour cream.
